Low Carb Comfort Food Shepherd's Pie

I love this recipe and I love comfort food. Now I can have the best of both.

Shepherd's Pie - Low Carb Version

Ingredients:

  • 2 pounds ground beef
  • 1/2 onion, chopped
  • seasonings salt, pepper, garlic powder
  • 1 large egg beaten
  • 6 ounces shredded cheddar cheese, divided
  • 16 ounce can of french style green beans
  • 16 ounces cauliflower, cooked 
  • 3 TBLS butter
  • 1/4 cup sour cream 
Brown ground beef with chopped onion and seasonings. Drain. Add beaten egg and 1/2 the cheddar cheese. Spread on the bottom of a baking dish. Add the green beans that have been buttered and seasoned with salt and pepper. Spread evenly over the ground beef mixture.
Place the cooked cauliflower in a food processor with 2 TBLS butter and sour cream. Puree until smooth add salt and pepper.
Spread the cauliflower mixture evenly over green beans. Top with the rest of your cheddar cheese and bake in the over at 350 degrees for about 35 minutes or until bubbly.

This recipe turned out really good. I'll make it again. The left overs I cut into square serving sizes and placed in the freezer for a quick meal later.

Low Carb Pizza

This is the best low carb, gluten free pizza to date that I've made. I've tried other recipes but this one is my favorite.

Crust Ingredients:

  • 2 cups mozzarella cheese, melted in the microwave for about 90 seconds to 2 minutes.
  • Mix in 3 TBS cream cheese
  • Add 1 egg 
  • add seasonings like garlic powder, basil, Italian seasonings (whatever you like)
Form into a dough ball and coat with olive oil or whatever oil you have on hand. Press onto a pizza pan. Bake 10 minutes. Flip over onto another pizza pan and bake 5 more minutes.

Pizza Sauce Ingredients:

  • small can of tomato sauce
  • a few drops of stevia ( I use organic Now brand)
  • add seasonings like garlic powder, onion powder, Italian seasonings, and basil to taste
Add on top your baked crust. Tomatoes have a higher carb count so take it easy on the sauce if you want to cut carbs. Add Turkey pepperoni or toppings of choice. Top with Parmesan cheese.
Bake 5 more minutes. Cut and serve.
You can add more mozzarella cheese if you like but the crust adds a great cheese taste and a pizza crust texture.

Low Carb Waffles

Here's a recipe for low carb, gluten-free waffles. When trying to eat low carb I find the hardest part for me is breakfast. I found a recipe on Pinterest and tweaked it a little. 
Ingredients:
  • 6 eggs
  • 1/4 cup unsweetened vanilla almond milk (may need to add more to get a pancake consistency) 
  • 1/2 tsp liquid stevia ( I used organic Now brand)
  • 1/2 tsp baking powder
  • 1/3 cup coconut flower
  • 1/2 tsp sea salt
  • 4 TBLS softened butter
Add all the ingredients in a mixer or blender and combine. Preheat waffle maker and spray with cooking spray. Divide batter into 4 servings. 

Top with butter, or whipped cream or just eat plain. I think they make a great treat or delicious breakfast.
